The 2018 Ercavio Rosado is a very pale Cencibel, the local strain of Tempranillo, cold fermented for two months, kept with the lees for a further two months and then bottled unoaked. It's super pale and light. I always compare it to a white, but they say they look for unctuousness. The palate is serious and silky with very tasty flavors. It's clean and elegant, really easy to drink.
